The Schaefers began their journey in food allergies at Walt Disney World(R) Resort. Joel was the culinary development and special dietary needs manager, responsible for developing the food allergy and special diets program for Disney properties worldwide and Disney Cruise Line, which is known as the gold standard in the food service industry.
